Brennan Sopko began his journey in the restaurant industry as a graduate from the Hospitality Management Program at Pennsylvania State University, holding a level one certification from the Court of Master Sommeliers. During his studies, he had the opportunity to visit a diverse range of vineyards and taste with vintners in Champagne, Burgundy, Loire Valley, Alsace, Piedmont, Tuscany, Veneto, and Alto Adige regions. Capitalizing on his strong educational background, Sopko joined DineAmic Hospitality in 2014 as an operational intern and became a valuable member of the team. In 2015, he helped DineAmic Hospitality and Fabio Viviani open the highly successful Bar Siena and BomboBar in Chicago's bustling West Loop neighborhood. Shortly after, in February 2016, Sopko accepted a position as a floor manager at Siena Tavern and has climbed his way up the ranks since by being promoted to Assistant General Manager and now General Manager; a much deserved accolade under his wing. Under the guidance of DineAmic Hospitality's Wine Director, Adam Sweders, and utilizing his wine expertise both Sopko and Sweders redeveloped Siena Tavern’s wine program to offer more than double of the original bottle offerings. The restaurant then earned Wine Spectator’s Award of Excellence in 2018 and again in 2019, becoming one of the first DineAmic Hospitality venues to receive this award. In early 2020, Sopko will be continuing his sommelier education, pursuing a level two certification.
